Instructions
- Preheat your oven to 350 degrees F and line a 13×9-inch pan with parchment paper, allowing it to overhang for easy removal.
- Slice half of the chilled cookie dough into thin pieces and place them evenly across the bottom of the pan, pressing down lightly to form a crust.
- Bake the crust in the preheated oven for about 10 minutes until set but not browned; it should start firming up around the edges.
- In a mixing bowl, beat together the softened cream cheese, egg, granulated sugar, vanilla extract, and lemon juice until smooth and creamy.
- Spread the cheesecake mixture evenly over the warm crust and crumble remaining cookie dough on top; return to oven for another 35–40 minutes until golden brown and set throughout.
