- 4–5 medium ripe peaches, peeled and sliced (or 4 cups frozen sliced peaches, thawed)
- 3/4 cup granulated sugar
- 1/4 cup brown sugar
- 1 cup all-purpose flour
- 1 1/2 teaspoons baking powder
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, melted
- 1/3 cup milk
- 1 teaspoon ground cinnamon
- 1 teaspoon vanilla extract
- 1 tablespoon lemon juice
- Optional: pinch of nutmeg or ginger
Instructions
- Prepare your campfire or grill setup and preheat your Dutch oven over indirect heat to prevent sticking. Feel the warmth radiating from the coals.
- In a bowl, toss the sliced peaches with granulated sugar, lemon juice, cinnamon, and salt. Notice the juices starting to pool around the peaches as they sit.
- In another bowl, whisk together flour, baking powder, brown sugar, and salt until well mixed. The dry ingredients will create a pleasant aroma as you blend them.
- Slowly add melted butter along with milk and vanilla extract to the dry mixture until just combined. The batter should flow smoothly off your spoon without lumps.
- Pour the peach mixture into the warmed Dutch oven evenly across the bottom. Spoon dollops of batter over top without spreading too much; enjoy watching it expand while baking.
