- 1 cup brown sugar
- 2 cups milk
- 2 large eggs
- 1/4 cup cornstarch
- 1 tablespoon butter
- 1 teaspoon vanilla extract
- 1 prepared pie crust
Instructions
- In a medium saucepan over medium heat, combine brown sugar, cornstarch, and milk. Whisk continuously until the mixture thickens and bubbles gently around the edges.
- Remove the saucepan from heat and let it cool slightly. Whisk in beaten eggs and vanilla extract until well combined, then return to low heat for another 2–3 minutes while stirring constantly.
- Pour the filling into the pre-baked pie crust, smoothing out any bubbles on top with a spatula. Bake in an oven preheated to 350°F for about 10–15 minutes until slightly set but still jiggly.
- After baking, let the pie cool at room temperature for about 30 minutes before refrigerating to help set the creamy filling.
- Chill for at least two hours before serving, slicing into portions just before serving and adding whipped cream or chopped nuts if desired.
