Ingredients
Scale
- 2 cups fresh or frozen pitted cherries
- 1 ½ cups whole milk
- ½ cup heavy cream
- 4 large eggs
- ½ cup granulated sugar
- 1 tsp pure vanilla extract
- ¼ tsp almond extract (optional)
- Pinch of salt
- 2 tbsp unsalted butter (for greasing)
- 2 tbsp granulated sugar (for dusting)
Instructions
- Preheat your oven to 350°F and generously butter a 9-inch round baking dish. Sprinkle 2 tablespoons of sugar on top for a light crust as it bakes.
- Spread the pitted cherries evenly across the bottom of the prepared baking dish, ensuring each bite will have fruit included.
- In a medium bowl, whisk together the eggs and sugar until pale and slightly thickened, then add milk, cream, vanilla extract, almond extract (if using), and a pinch of salt until smooth.
- Pour the custard mixture evenly over the arranged cherries, taking care not to disturb them too much during pouring.
- Bake for 35–40 minutes until set but still slightly wobbly in the center and golden brown on top; let cool for at least 15 minutes before serving.
