- In a heatproof bowl over simmering water, melt the white chocolate and heavy cream together until smooth and glossy. Stir occasionally to ensure even melting.
- Remove from heat and stir in the vanilla extract and salt until fully combined, creating a silky mixture.
- Gently fold in the finely chopped pistachios until evenly distributed throughout the mixture.
- Cover the bowl with plastic wrap and refrigerate for 1-2 hours until firm enough to handle.
- Using a cookie scoop or your hands, form the chilled mixture into 1-inch balls. Roll each ball in additional chopped pistachios or optional coatings until well coated.
