Ingredients
Scale
- 1 cup margarine or coconut oil (softened)
- ¾ cup brown sugar (packed)
- ½ cup granulated sugar
- 2 large eggs
- 2 tsp vanilla extract
- 2½ cups all-purpose flour
- 1 tsp baking soda
- ½ tsp salt
- 1½ cups semi-sweet chocolate chips
- 1 cup pastel-colored chocolate-covered almonds
Instructions
- Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper to prevent sticking.
- In a large bowl, cream together the softened margarine, brown sugar, and granulated sugar until light and fluffy, about two minutes.
- Beat in the eggs one at a time, mixing well after each addition, then stir in the vanilla extract until smooth.
- In another bowl, whisk together the flour, baking soda, and salt before gradually adding this dry mix to the wet ingredients until just combined.
- Gently fold in the chocolate chips and half of the pastel-colored chocolate-covered almonds using a spatula, then scoop dollops of dough onto the prepared sheets.
- Press some additional candies on top of each cookie before baking to enhance their colorful appearance.
- Bake in the preheated oven for about 10-12 minutes, until edges are lightly golden while centers look slightly underbaked but set.
