  • Total Time: 32 minutes
  • Yield: 24 servings 1x

Ingredients

Scale
  • 1 cup margarine or coconut oil (softened)
  • ¾ cup brown sugar (packed)
  • ½ cup granulated sugar
  • 2 large eggs
  • 2 tsp vanilla extract
  • 2½ cups all-purpose flour
  • 1 tsp baking soda
  • ½ tsp salt
  • 1½ cups semi-sweet chocolate chips
  • 1 cup pastel-colored chocolate-covered almonds

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper to prevent sticking.
  2. In a large bowl, cream together the softened margarine, brown sugar, and granulated sugar until light and fluffy, about two minutes.
  3. Beat in the eggs one at a time, mixing well after each addition, then stir in the vanilla extract until smooth.
  4. In another bowl, whisk together the flour, baking soda, and salt before gradually adding this dry mix to the wet ingredients until just combined.
  5. Gently fold in the chocolate chips and half of the pastel-colored chocolate-covered almonds using a spatula, then scoop dollops of dough onto the prepared sheets.
  6. Press some additional candies on top of each cookie before baking to enhance their colorful appearance.
  7. Bake in the preheated oven for about 10-12 minutes, until edges are lightly golden while centers look slightly underbaked but set.
