Instructions
- Preheat your oven to 350°F (175°C), allowing it to fully heat so your crust bakes evenly.
- In a large bowl, cream together the softened butter and granulated sugar until light and fluffy, about 3-4 minutes.
- Add in the egg and vanilla extract; beat until fully combined and smooth in texture.
- In another bowl, whisk together the flour, baking powder, and salt. Gradually mix this dry mixture into the wet ingredients on low speed until just combined.
- Transfer the dough into a prepared pan, pressing evenly into the bottom at about ¼ inch thickness. Bake for 15-18 minutes until golden brown around the edges.
- Allow the crust to cool completely on a wire rack before spreading on the cream cheese layer.
- In a separate bowl, blend together the cream cheese, powdered sugar, vanilla extract, and optional sour cream until smooth and creamy.
- Spread the cream cheese mixture over the cooled crust evenly using a spatula.
- Arrange sliced strawberries, blueberries, and raspberries over the cream cheese layer for a colorful presentation.
- Chill in the refrigerator for at least 30 minutes before slicing and serving.
