  • 2 large egg yolks
  • ¼ cup all-purpose flour
  • 2 tbsp cocoa powder
  • 1 cup fresh berries
  • ½ cup mint leaves

Instructions

  1. Melt the semi-sweet chocolate and unsalted butter in a heatproof bowl over simmering water until smooth and glossy.
  2. Remove from heat and stir in powdered sugar until combined, then whisk in the whole egg and egg yolks until creamy.
  3. Sift in all-purpose flour and cocoa powder, gently folding until just mixed; small lumps are okay.
  4. Lightly grease ramekins with butter and dust with cocoa powder to prevent sticking.
  5. Divide the batter among ramekins, filling them about ¾ full, then bake at 425°F (220°C) for 12–14 minutes until edges are set but centers are soft.
  6. Let cakes sit for one minute before inverting onto plates; serve immediately for the best gooey texture.
