- 4 oz semi-sweet chocolate
- ½ cup unsalted butter
- 1 cup powdered sugar
- 1 whole egg
- 2 large egg yolks
- ¼ cup all-purpose flour
- 2 tbsp cocoa powder
- 1 cup fresh berries
- ½ cup mint leaves
Instructions
- Melt the semi-sweet chocolate and unsalted butter in a heatproof bowl over simmering water until smooth and glossy.
- Remove from heat and stir in powdered sugar until combined, then whisk in the whole egg and egg yolks until creamy.
- Sift in all-purpose flour and cocoa powder, gently folding until just mixed; small lumps are okay.
- Lightly grease ramekins with butter and dust with cocoa powder to prevent sticking.
- Divide the batter among ramekins, filling them about ¾ full, then bake at 425°F (220°C) for 12–14 minutes until edges are set but centers are soft.
- Let cakes sit for one minute before inverting onto plates; serve immediately for the best gooey texture.
