Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking pan so the brownies release easily after baking.
- In a large bowl, mix melted butter with granulated sugar until smooth and creamy before adding eggs one at a time along with vanilla extract.
- In another bowl, whisk together flour, cocoa powder, salt, and baking powder; gradually mix this into the wet ingredients until just combined and thickened.
- Pour the brownie batter into the prepared pan evenly and bake for 25-30 minutes or until a toothpick inserted comes out with moist crumbs.
- Allow cooling completely before frosting with a mixture of powdered sugar, softened butter, heavy cream, and peppermint extract until smooth and spreadable.
- For the ganache, melt chocolate chips with heavy cream over low heat until silky smooth; pour over frosted brownies and let set before cutting into squares.
