Ingredients
Scale
- 1 cup Butter (softened)
- 2 cups Sugar
- 4 large Eggs
- 3 cups All-purpose flour
- 1 tablespoon Baking powder
- 1 cup Buttermilk (or regular milk plus 1 tablespoon lemon juice)
- 1 cup Pecans (chopped and toasted)
- 1/2 cup Butter (unsalted) (for glaze)
- 1 cup Brown sugar (dark brown preferred)
- 1/2 cup Pecans (for topping)
Instructions
- Preheat your oven to 350°F and grease a 9-inch round cake pan with butter, then line the bottom with parchment paper for easy removal.
- In a large mixing bowl, cream together the softened butter and sugar using an electric mixer until light and fluffy, about 4-5 minutes.
- Add the eggs one at a time while mixing on low speed, ensuring each egg is fully incorporated before adding the next.
- In another bowl, whisk together the flour and baking powder, then gradually add this to the wet ingredients alternating with buttermilk while mixing gently until just combined.
- Toss the chopped pecans in a tablespoon of flour before folding them into the batter to prevent sinking, then pour into the prepared pan and bake for 30-35 minutes until golden brown.
