Instructions
- Preheat your oven to 350°F and line a 9×9-inch baking pan with parchment paper, creating an easy lift-out.
- Crush the graham crackers into fine crumbs and mix them with melted butter, sugar, and salt until moistened; press this mixture firmly into the bottom of the pan.
- Bake the crust for about 10 minutes until lightly golden brown and fragrant.
- In a large bowl, beat the cream cheese until smooth, then gradually mix in the sweetened condensed milk until no lumps remain.
- Add egg yolks one at a time, mixing well after each addition before stirring in lime juice, zest, and vanilla extract until fully combined.
- Pour the filling over the baked crust and bake for an additional 15-18 minutes until set around the edges but jiggly in the center.
- Allow to cool briefly before refrigerating for at least two hours; this will help firm up the texture for clean slicing.
