- 1–2 tsp key lime zest
Instructions
- Prepare the key lime curd by whisking egg yolks, granulated sugar, key lime juice, and zest in a heatproof bowl over simmering water until thickened, about eight to ten minutes.
- Sift almond flour and powdered sugar into a large bowl, ensuring there are no lumps that could affect the texture of your macarons.
- In a saucepan, combine granulated sugar and water over medium heat until dissolved; cook until it reaches 248°F while whipping aged egg whites until soft peaks form.
- Slowly pour the hot syrup into the whipped egg whites while beating on low speed; increase speed to high until glossy stiff peaks form, then fold in one-third of this mixture with the dry ingredients.
- Transfer batter into piping bags and pipe circles onto prepared silicone mats; let them sit until they form a skin before baking at preheated temperature for twelve to fifteen minutes.
