Ingredients
Scale
- 1 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 2 cups all-purpose flour
- 1/2 teaspoon salt
- 1 cup light corn syrup
- 1 cup brown sugar, packed
- 4 large eggs
- 1 1/2 teaspoons vanilla extract
- 2 cups chopped pecans
- 1/4 teaspoon salt
Instructions
- Preheat your oven to 350°F (175°C) and line a 9×13-inch baking pan with parchment paper, leaving some overhang for easy removal later.
- In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
- Mix in the flour and ½ teaspoon salt until a soft dough forms, ensuring there are no dry flour spots visible.
- Press the dough evenly into your prepared pan using your hands or the back of a measuring cup.
- Bake for 18–20 minutes until lightly golden around the edges; let it cool slightly before adding the filling.
- In another bowl, whisk together corn syrup, brown sugar, eggs, vanilla extract, and ¼ teaspoon salt until smooth.
- Stir in chopped pecans until evenly coated and then pour this mixture over the baked crust, spreading it out evenly.
- Bake again for another 30–35 minutes until the edges are set but the center is still slightly jiggly; let it cool completely in the pan before slicing.
