Ingredients
Scale
- 1 cup granulated sugar
- 1/4 cup fresh pesticide-free lilac blossoms, stems and green parts removed
- 2 1/4 cups all-purpose flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1 cup unsalted butter, room temperature (2 sticks)
- 1 large egg
- 1 teaspoon vanilla extract
Instructions
- Prepare the lilac sugar mixture by pulsing granulated sugar and fresh lilac blossoms in a food processor until finely chopped, releasing a fragrant aroma.
- In a medium bowl, whisk together the flour, baking powder, and salt until blended; the mixture should appear uniform without lumps.
- In a large bowl, beat softened butter with the lilac sugar mixture using an electric mixer until light and fluffy, about 2 to 3 minutes.
- Add the egg and vanilla extract to the butter-sugar mix and beat until fully incorporated; it should be smooth without visible streaks of egg.
- Gradually mix in the dry ingredients on low speed just until combined; the dough will look slightly crumbly but hold together when pressed.
- Chill the dough for at least one hour before rolling it out on a floured surface to about a quarter-inch thickness; it should feel cool and firm to touch.
- Preheat your oven to 350°F while cutting shapes with cookie cutters from the chilled dough and spacing them two inches apart on baking sheets lined with parchment paper.
- Bake for 8 to 10 minutes or until edges are barely golden while centers remain soft; let them rest briefly before transferring to wire racks to cool completely.
