Ingredients
Scale
- 2 cups crushed pineapple, drained
- 1 cup all-purpose flour
- 1/2 cup brown sugar
- 1/2 cup granulated sugar
- 1/2 cup butter, melted
- 1/2 cup oats
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
- 2 eggs
Instructions
- Preheat your oven to 350°F (175°C) and grease a baking dish with butter or cooking spray, preparing for even baking.
- In a mixing bowl, combine melted butter, brown sugar, granulated sugar, and vanilla extract until smooth and glossy.
- Add eggs one at a time to the mixture, stirring thoroughly after each addition until slightly thick but smooth.
- In another bowl, whisk together flour, baking powder, and salt before gently folding this dry mixture into the wet ingredients until just combined.
- Carefully fold in the drained crushed pineapple until evenly distributed through the batter.
- Pour the prepared batter into the greased baking dish and spread it out evenly with a spatula.
- In a separate bowl, mix oats, flour, brown sugar, and melted butter until crumbly; sprinkle this mixture evenly over the batter.
- Bake in the preheated oven for about 30–35 minutes or until golden brown on top and a toothpick comes out clean when inserted in the center.
- Allow the bars to cool before cutting into squares or rectangles to ensure they hold their shape.
