Instructions
- Chill your unbaked pie crust in the fridge while preparing the filling to prevent shrinkage.
- In a large bowl, whisk together melted butter and granulated sugar until smooth and glossy.
- Add eggs one at a time, whisking after each addition until the mixture is uniform in color.
- Gently sprinkle in flour and mix until no dry spots remain, then stir in buttermilk and vanilla extract along with lemon zest if using.
- Carefully pour the filling into the chilled pie crust and bake at 350°F for about 50–60 minutes until golden brown on top.
