  • Total Time: 1 hour 10 minutes
  • Yield: 8 servings 1x

Ingredients

Scale
  • 2 cups all-purpose flour
  • 2 tsp baking powder
  • ¼ tsp baking soda
  • ½ tsp salt
  • 1 tsp ground cinnamon
  • 8 tbsp butter (for batter)
  • ⅓ cup granulated sugar
  • ⅓ cup brown sugar
  • 1 cup mashed bananas (approx. 2 bananas)
  • ⅓ cup maple syrup
  • 2 tsp vanilla extract
  • 3 eggs
  • ¾ cup buttermilk
  • 8 tbsp butter (for toffee sauce)
  • ¾ cup brown sugar (for toffee sauce)
  • ¾ cup heavy cream
  • 1 tsp vanilla extract (for toffee sauce)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a deep baking dish to ensure easy release after baking.
  2. In a mixing bowl, cream together granulated sugar, brown sugar, and butter until light and fluffy, creating a pale yellow mixture.
  3. Add eggs one at a time while mixing, followed by vanilla extract, buttermilk, maple syrup, and mashed bananas until smooth and creamy.
  4. In another bowl, whisk together flour, baking powder, baking soda, salt, and cinnamon; then gradually mix into the wet ingredients until just combined.
  5. Pour the batter into the prepared dish and smooth the top before baking for 45–55 minutes until golden brown and a toothpick comes out clean.
  6. Allow the cake to cool slightly before poking holes throughout its surface with a skewer or fork for better sauce absorption.
  7. For the toffee sauce, melt butter and brown sugar over medium-low heat until smooth; stir in heavy cream and vanilla extract until thickened.
  8. Pour the warm toffee sauce over the cooled cake so it seeps into the holes; let it soak for at least one hour before serving.
