Instructions
- Preheat your oven to 350°F (175°C) and grease a 9-inch square baking dish to prevent sticking.
- Spread the chopped rhubarb evenly in the prepared baking dish and sprinkle granulated sugar and lemon juice on top, allowing it to sit and release juices.
- In a bowl, mix flour, baking powder, and salt, then add milk, melted butter, and vanilla extract until smooth before pouring over the rhubarb gently without stirring.
- Combine brown sugar and cornstarch in another bowl and sprinkle this mixture over the batter layer before carefully pouring boiling water over everything without stirring.
- Bake in the preheated oven for 40-45 minutes until golden brown on top and bubbly around the edges; let cool slightly before serving.
