Ingredients
Scale
- 1/2 cup almond milk
- 1/4 cup chia seeds
- 1 tablespoon maple syrup (optional)
- 1/2 teaspoon vanilla extract
- 1 cup fresh strawberries (hulled and chopped)
- 1 tablespoon maple syrup (optional, adjust to taste)
Instructions
- In a mixing bowl, whisk together almond milk, chia seeds, maple syrup, and vanilla extract until well combined. Let it sit for about 5 minutes, then stir again to prevent clumping.
- Transfer the mixture into a jar or airtight container and refrigerate for at least 4 hours or overnight. It should become gel-like and thick.
- While the pudding chills, blend hulled strawberries in a blender until smooth. For added sweetness, include maple syrup before blending.
- Once the chia pudding is set, layer it in serving bowls followed by a generous spoonful of strawberry puree on top.
- Add finishing touches such as additional fresh strawberries or nuts before serving for extra crunch.
