Instructions
- In a mixing bowl, whisk together almond milk, chia seeds, maple syrup, and vanilla extract until fully combined and smooth. The mixture should look creamy and well-blended.
- Transfer the mixture into a jar or airtight container and refrigerate for at least four hours or overnight. When ready, it should have thickened into a gel-like consistency.
- While the pudding chills, blend hulled strawberries until smooth in a blender or food processor. Taste and add maple syrup if desired before blending again.
- Once the chia pudding has thickened, layer some pudding in serving bowls followed by a generous spoonful of strawberry puree on top. The layers should be visually distinct.
- For added texture, top each serving with sliced fresh strawberries or nuts just before serving to maintain their crunchiness.
