Instructions
- Preheat the oven to 350°F and grease a 9×5-inch loaf pan, ensuring every corner is coated to prevent sticking.
- In a large bowl, whisk together mashed bananas, eggs, oil or melted butter, yogurt or sour cream, sugar, and vanilla extract until smooth and creamy.
- In another bowl, sift together flour, baking soda, salt, and optional cinnamon for a lump-free dry mix that will blend easily.
- Gently fold the dry ingredients into the wet mixture using a spatula until just combined; be careful not to overmix.
- If desired, fold in nuts or chocolate chips before pouring the batter into the prepared loaf pan and smoothing the top.
- Bake for about 50-60 minutes until a toothpick inserted into the center comes out clean or with a few moist crumbs attached; let cool in the pan for ten minutes before transferring to a wire rack.
